Stuffed French Toast and Shrimp and Grits Are Headed to Rutherford County: Flying Biscuit Café Signs On

Murfreesboro's breakfast scene is about to get a Southern heavyweight. Flying Biscuit Café, the Atlanta-born brand known for stuffed French toast and shrimp and grits, has a franchise agreement in place for its first café in Murfreesboro and Rutherford County.

The franchisee

The local operator is Paresh Patel, a restaurant and retail operator with more than a decade in food service. By his own account, he first came across the brand on social media and was won over by the look and quality of the food. He plans to position the café as a weekend destination for families and groups of friends, with full-service catering on the menu as well, and he has said he hopes to grow into a multi-unit operator with three Flying Biscuit locations over time.

What is on the plate

Flying Biscuit built its name in Atlanta in 1993, and the concept has been a breakfast-and-lunch fixture ever since. The menu leans comfortably Southern: stuffed French toast, shrimp and grits, omelets, burgers, wraps and, of course, the biscuits that gave the place its name. The Murfreesboro café is planned as a breakfast and lunch spot that closes at 3 p.m., which puts it squarely in the brunch lane that has been growing across Middle Tennessee.

The brand today counts 44 open cafés with another 12 in development across Georgia, Alabama, Tennessee, South Carolina, North Carolina, Florida, Texas and Missouri. Tennessee has been part of that push, with new cafés recently opening and more announced for the Tri-Cities and South Nashville.

What we do not know yet

The key details remain open. Site selection is underway, and an address and opening date will be announced only after a lease is signed. Hiring information will follow later. For now, that means nobody can say whether the café will land near the busy Medical Center Parkway corridor, closer to the Square, or out toward the Gateway development, all of which have been adding restaurants.

That is a competitive field. Murfreesboro has been collecting new dining names at a steady clip, from the soon-to-open Chinwag at The Fountains at Gateway to a long list of chains and local concepts, and a morning-focused brand will be competing for the same weekend crowds that already queue at established brunch spots.

Why it matters

Breakfast and brunch have quietly become one of the most contested categories in local dining: customers who may not commit to a sit-down dinner will happily spend a Saturday morning on a good plate of eggs and a long conversation. A national-scale brand with Southern roots, run by a local franchisee who says he wants to be part of the community, is a straightforward bet on that habit.

We will update this story when a location and a date are confirmed. In the meantime, you can browse where to eat now in our Murfreesboro food and drink coverage.
